Useful microbiological sampling and testing underpinning risk-based food safety management workshop

In this workshop, several ICMSF experts presented on basic concepts in microbiological sampling and testing as well as on microbiological risk assessment. These are key concepts underpinning modern, risk-based, food safety management approaches. Doing so, the ICMSF experts combined the evolution of science and technology with the development in good food hygienic and manufacturing practices, as well as with the development of food safety standards, such as through Codex Alimentarius. Part of the session was devoted to established concepts; after the break, several new developments in food safety management were discussed. Background
The workshop was held as a side meeting at the 54th session of The Codex Alimentarius Committee for Food Hygiene (CCFH) held in Nairobi, Kenya, from 11-15 March 2024.
CCFH is the key intergovernmental organisation that, under the auspices of FAO and WHO, develops and harmonises food safety guidelines and standards that inform governments, food industry, and consumers.
